Anchorage trail...

This is one of our favorite walking trails ...

Built and paid for by Papa John's Pizza founder John Schnatter who is a resident and owns about 6% of the land in Anchorage.

Anchorage is a beautiful heavily shaded city, within Louisville city limits.

In 1914, the firm of Frederick Law Olmsted designed a plan for Anchorage, which would incorporate stone bridges and triangle intersections, similar to Olmsted's plans for Louisville's park system.

Here are a few pictures we took Saturday. We walk about 3.5 miles there now. John Schnatter keeps adding to the trails and has a great vision there. In an interview, he told the Courier-Journal that his goal was purely to "preserve the city's character".

We are forever grateful to John and his vision for "Our Town". Thanks!

Jesus died for you, he paid the price for all our sins, it is finished! Accept him today, ask Jesus to be your savior and to come into your heart. Come to him like a little child. You don't have to wait until you are perfect, he accepts you right where you are! Jesus loves you, he really, really does!

St James Art Fair

The day was perfect!
If you ever get a chance to visit our great city Louisville Kentucky, the St James Art Fair would be a perfect reason to come....it's always the first weekend in October. We have it all here, glorious parks, beautiful neighborhoods, a river park and walk, great restaurants, museums, fantastic theatre and the people are the best!!

Seas of people! Friday morning used to be the best time to go...not if everyone gets the same idea though! There's always room to walk and move around.















Huge fountain in the middle of the Boulevard..this is were you get some great food too! Brats are very popular...sometimes Jerry Abramson, Mayor for life, is serving them up!

It's also a great place to meet up with someone.

Sidewalk cafe with yummy food...Louisville is a dangerous place for weight control...it's loaded with wonderful neighborhood places to eat with great chefs! We even inherited some from New Orleans after the flood...they came to find refuge and stayed. I know why! This is a wonderful place to live!

This is where the Pumpkin Roll people always had their booth...ALWAYS!!! I start thinking about the St James Art Fair in the middle of summer...then I start dreaming about those pumpkin rolls....$10 a piece or $1 a slice...pack them in cute little orange bags....GONE!! They were not there, or anywhere....we searched and asked around....no one knew or had a clue!! NO, No No! It couldn't be..but there is Dick looking at belts where there SHOULD be pumpkin rolls!!

Does this look like Pumpkin Rolls to you?.....geez Louise...so what's a girl to do? I bought a belt of course! This guy made them to fit...I told him I expected to lose two more inches and he allowed for that..I got the black one second to the left. We decided it was okay, we needed nice belts since we lost the weight, but I'm worried about the pumpkin roll people now...did they lose electricity during the storm we had...some lost it for 2 weeks...or get tired of making the rolls?....it's a mystery, but we will get to the bottom of it I'm sure!! You can't just disappear after many years!!

Pumpkin Pie!


Okay, It's just a little piece...but the taste! Oh the taste!! Love, love love this time of year!

I'm heading down to the St James Art Show....going to claim my piece of pumpkin roll....yum!!


Yield
12 servings (serving size: 1 wedge and about 1 tablespoon topping)



Ingredients
Filling:
3/4 cup packed brown sugar
1 3/4 teaspoons pumpkin pie spice
1/4 teaspoon salt
1 (12-ounce) can evaporated low-fat milk
2 large egg whites
1 large egg
1 (15-ounce) can unsweetened pumpkin

Crust:
1/2 (15-ounce) package refrigerated pie dough (such as Pillsbury)
Cooking spray

Topping:
1/4 cup whipping cream
1 tablespoon amaretto (almond-flavored liqueur)
2 teaspoons powdered sugar
Preparation

Position oven rack to lowest position.

Preheat oven to 425°.

To prepare filling, combine first 6 ingredients in a large bowl, stirring with a whisk. Add pumpkin, and stir with a whisk until smooth.

To prepare crust, roll dough into an 11-inch circle; fit into a 9-inch pie plate coated with cooking spray. Fold edges under and flute.

Pour pumpkin mixture into the crust. Place pie plate on a baking sheet. Place baking sheet on lowest oven rack. Bake at 425° for 10 minutes. Reduce oven temperature to 350° (do not remove pie from oven); bake an additional 50 minutes or until almost set. Cool completely on wire rack.

To prepare topping, beat cream with a mixer at high speed until stiff peaks form. Add the amaretto and powdered sugar, and beat until blended. Serve with pie.

New favorite things.....

Weight loss stressing you out?



After being on www.thedailyplate.com for a couple of months I hit a plateau. I started the "worry about it syndrome"..... oh dear, I thought, please don't let this be like every other diet I've tried.

I've hit three plateaus. First time, got my sodium in check, try to stay around 2300mg (that's still hard for me!). Second time, wasn't eating enough, so I added 200 calories a day. (you have to eat to lose!). Third time, added another mile to my walk. Still losing the weight, and happy with where I am right now! ;-)

The main thing is to not stress out, it does no good anyway! Just change something you are doing. One big difference for me this time, was using a website with lots of other people doing the exact thing I was doing......many groups and forums. Searching through them helped find solutions. Making on-line friends who had succeeded and lost the weight were so helpful with advice they offered me. I am eternally grateful.

Another thing that helped me was http://www.sparkpeople.com/. Although I don't use that web site to log in calories, the free advice you can receive, plus wonderful recipes to use are unbeatable. Got an e-mail the other day from them with a quiz you can take about "Is weight loss stressing you out?", you can take the test it here.

We are so hard on ourselves and so good at beating ourselves up. This is not the time to do that, or the reason. Give yourself a big hug and a atta girl (or guy). If you messed up...no big deal...get up, brush yourself off and start all over again.

For you who may be new to my blog, Sam is our 3 1/2 year old grandson. Last year our son Brad and daughter in law Cheri adopted Sam from Russia. He is our sweet boy, we are so proud of him.....he brings us so much laughter and joy!

Show and tell....

My daughter Melissa told me yesterday was Leah's day for show and tell at preschool. It had been her weekend to take the bear home with her and report back all the places they had been together. You can read more about it here. Leah dressed the bear in a lovely dress and took very good care of "her". They had an awesome time together.



Every time I think about show and tell my mind wonders back to first grade when I took a piece of cake to show and tell...seemed like a great idea at home....cake was wonderful right? No one, I mean no one thought it was interesting. Poor me! It wasn't as bad as the time I forgot to bring cookies and Kool-Aid to our girl scouts meeting....whew..those girls can turn on you in an instant!! ;-)
